I don't generally use recipes, so the following quantities are likely to be a bit vague. Nothing complicated about pancackes, though.

In a bowl:

1 C self raising flour (sift it, if you can be arsed. My coffee machine usually isn't warmed up by that stage, so I don't)
1/2 t baking powder (yes, in addition to the above being self-raising)
1 s ground cinnamon

Combine with a whisk (because you'll use it in a minute anyway).
Heat up your frying pan over a medium low flame (I prefer gas on my stove tops)

Chuck in to the bowl:

1 egg (shell removed)
1 C milk (full cream, fat bastard milk)
1 t vanilla bean paste (none of that essence stuff. I want to see the little seeds!

Combine again with the whisk. Let it rest while you add a t of good butter to the pan. It should bubble, but not burn. Grab a ladel full of the batter and drop in 2 or 3 blobs. Turn 'em when you see bubbles that stay as holes on the top of the raw side. Add 1/4 t butter to the pan before the next round. Serve with blueberries and maple syrup.

C = metric cup
t = teaspoon
egg = egg
s = shoggle

Interesting question, Tavernites: How often do you use a recipe?

Personally, I use them the first time I cook something, unless it's a magic thrown-together leftover surprise. After that, I get funky and innovate.

I do a recipe by the book the first few times I make it unless it is obviously in need of a change. This is why I end up cooking with our son more often than Melissa does. He follows recipes to the letter and I have to negotiate any changes with him well in advance.

I'm more of a cook than a chef so I tend to stick with what works rather than attempt any improvisation.
